Would fresh deer sausage go ok in Red Beans?

I don't think fresh sausage is the best option in beans. Smoke that shite first then drop it in

Yeah I do that often. I actually take the sausage out the casing and brown it, then add that to red beans

I was going to say your OP will have to cook it some first if he wanted to slice it up to brown. Other than that id go for it.

I’d pot fry it first like a fresh butcher’s sausage.
Eat it as a side with red beans that have been cooked with some kind of smoked meat, be it either smoked sausage or ham hock.
Don’t forget the rice.

Not if you don’t like deer sausage, and I don’t. The pork is what makes deer sausage good so I go 100% pork with sausage BUT red beans is a rare occasion in which I prefer that crappy Richard type sausage.

I only want it smoked when cooked in the actual beans. Better flavor. On the side though, I love cooking up some fresh green onion in the pan to have along with it.

Never done deer sausage in Red Beans. If you have leftover sausage from crawfish boil, it goes great in red beans for an extra spice.

So here’s the thing.

It’s a little to dry for red beans unless you mix in some pork and fry it with some onions and garlic before adding it to your beans.

Even tougher to do is to do what I did today/tonight with a six bean stew that included a lot of dried red beans, venison breakfast sausage and venison summer sausage (hard) and lots of diced onions and a little garlic.

Took me literally all day but it turned out really well.

You have to dice that hard summer sausage up small and let it break apart in the frying pan while the onions are caramelizing (sp) ... brings out the smokey though and you can sprinkle in a little smoked paprika and sprinkle in some smoked red pepper flakes to really set it off.

We tore mine up over rice tonight, Threw some diced hame leftover from New Year’s on top and some diced shallots... it was really good and I jarred six quarts in the process.

I've used fresh deer sausage before and it turned out fine. I browned the links in a skillet before slicing them.

I'm guessing your sausage is at least 50% pork, so you should have plenty of fat.
