brine in an ice chest for 24 hours, then season and smoke it.Have a party for the game and call it an elephant hip.

honestly i've never eaten good wild hog. its always way too tough to enjoy. i've tried it a few times and came to the opinion its just crap meat. but who knows, maybe it just wasnt cooked right.

No just you, I had brothers/friends that use hunt them, but I was never overly impressed with the meat. I did one time have some simi good slow cooked bbq wild pig. I guess my bro's knew how to hunt better than cook

But I will always be willing to try some cooked right.

Just curious, Are there any local "Wild Cook Offs" ever held in the area?

Smoking isnt the best choice, the fat content on wild hog is very low and it doesnt stand up to long periods of heating well. Your better off using a crock pot and keeping it moist.

Smoke it. Inject it with season of choice and smoke it. Then when done eating, take the bone and leftover meat on it and make a big pot of black eye peas and rice with the ham bone in it. MMMMmmmmmm

I find if you smoke it for about 9 hours with a pork shoulder on top to allow it to drip down on it then wrap in foil for the remainder of the time then it doesnt dry out.

YOUR CRAZY!! we have killed 8 the past two weeks and they are better than deer meat! the best is a young sal about 80 Lbs or less....yours is 65 lbs that is goin to be damn good....id inject it an smoke it and if you have the backstrap left stuff it and wrap it with bacon.
