Ermagad, a tomato would absolutely ruin a gumbo. A nice dark roux with good caramelized onions, bell peppers, celery and your protein is all you need. Keep it simple. Then dump it all over some mayo, mustard, pickle relish, crunchy trinity and potatoes.

I think the actual reason is that people outside of Louisiana generally don't know how to make a brown roux or they're afraid to try. So if they don't have the roux to give it flavor, they add tomatoes of some form to boost the umami factor.

I think many are missing what this thread is about. It is about a tomato based gumbo not a dark roux gumbo with tomatoes.

I think the worst gumbo I've ever eaten was at Domilise's in New Orleans. Thankfully it's not something they serve regularly

What I don't understand is how chefs / cooks still don't know how to look up a damn legitimate recipe online. Don't you love going to some place that has "gumbo" on the menu and it is some nasty thick soup (no roux) with tomato, fish, chicken, sausage, etc in it?

If you do a search for gumbo lots of the recipes dont even call for a roux.

creole cooking is what most people think of when they think cajun food.
