Glass bottles are a tipoff that the restaurant consolidates the bottles after each shift, making full bottles out of half empty ones.

They're probably not refilling from bottles.

Restaurants buy a big bag and refill from that.

I've only ever worked at chimes in college.
The chicks would put all the glass in a milk crate and set them up on a table at the end of the night. They'd bust out the plastics and start reloading them for the day shift.

Oh, and the answer to the OP, at least as explained by my old boss:

You have to cut costs anywhere you can. With an easy squirt bottle, people put WAY more ketchup on their plate than necessary. As a server, I threw out more side plates full of ketchup than I can even begin to count.

With glass, you have to work harder to get the ketchup. It keeps people from squirting half the bottle on their plate.

Clearly, he does. Only the finer dining establishments have glass ketchup bottles on their tables, along with the Tabasco and salt and pepper.

I was going to speak of individual ramekins of ketchup but I refrained. We take out special needs child (almost adult age) with us to nice places and heis going to order fries and ketchup. Love that boy.

You wish. And the new ketchup gets put in right on top of the old stuff. Ain't no FIFO in ketchup accounting.


We had a gallon (roughly) sized tub with notches on the rim that held upside down ketchup bottles to drain into the tub and a spigot at the bottom to refill the bottles. The contents of the bottles was always changing.
