Glass bottles are a tipoff that the restaurant consolidates the bottles after each shift, making full bottles out of half empty ones.

Why? You can refill any bottle from the huge bag just the same.

It's true. They buy plastic bottles to refill the glass bottles.

Why would they do that? Why wouldn't they use one of these bad boys?

Oh, and the answer to the OP, at least as explained by my old boss:

You have to cut costs anywhere you can. With an easy squirt bottle, people put WAY more ketchup on their plate than necessary. As a server, I threw out more side plates full of ketchup than I can even begin to count.

With glass, you have to work harder to get the ketchup. It keeps people from squirting half the bottle on their plate.

We had a gallon (roughly) sized tub with notches on the rim that held upside down ketchup bottles to drain into the tub and a spigot at the bottom to refill the bottles. The contents of the bottles was always changing.
