Why are my ribs doing this?

What is this gunk on my ribs?
Standard spare ribs from sams, standard seasoning with regular rubs, and standard temps in my Kamado (225-275).
This has happened before on other cooks but why does this happen? Does it mean the ribs are bad? I just used paper towels to sop/wipe it off but it takes some of the bark with it.

I think that’s just blood and marrow cooking out of the bones as the internal temp rises…

Does it have anything to do with them being frozen and then thawed?
I’m just curious as to why this happens or how to avoid it because it sure does make the ribs ugly. And why doesn’t it happen all the time?

Did you let them warm up to room temp first? Or from the refrigerator to the smoker ?

Freezer to fridge to counter. They were “flimsy” but still juuuuust a bit icy in the middle but thawed enough for me to get the membranes off easily. They probably needed to thaw another hour but I was trying to work around football watching.

Most pork is frozen in the supply chain at some point so I doubt you freezing it had anything to do with it.
