Whole hog heads, how to cook?

Had to stop in Walmart in Gonzales and they had a frozen endcap of frozen hog heads for .79 cents a pound. They appeared to be 15-20 lbs each.

After I scared my daughter with the frozen head, I started wondering what dishes are being made from these heads. Anyone have any ideas? Any good recipes for whole hog heads?

I think the two most common uses are tamales and hogs head cheese.

Hog head cheese is the greatest but smoking that head is good too.

Cut it in half, season it, and roast it until the skin is crisp and the meat is falling off the bone. Serve it with some crispy bread or flat bread.

Dig da eyes out if it has em boil the heck out of it just enough water to cover ya may hafta add some save the water when the thing is falling apart take it out let it cool, in the "stock" boil onions and celery bell peppers green onions parsley what ya like. While das boilin debone the skull should be very easy if ya boiled it enough. keep it all. put it back in the boiling veggies and let em get to know each other. Some folks pass it through a grinder some dont after an hour or so pour into loaf pans it will seet into cheese or if ya wanna be fancy call it pate`

making boudin and hog head cheese

We did this a few years ago sadly the big guy has gone on God rest his soul. just wanted yall to know we have done it a few times

Me and my buddies usta gather in the fall drink make boudin and etc every year. Sadly some have passed ane the rest of us getting kinda old we missed the last 2 years but will be doing it again soon when we do I'll bring the camera

And bring some younger folks to train up. Kids, nephews, nieces, neighbors, whoever.
