Whole Dungeness Crab

I recently came across a connection for whole fresh dungeness crabs and am wondering if F&D folks have any favorite cooking methods? I'm planning on steaming them with some Old Bay in the water and then basting with butter, but Dungeness is new to me. Thanks for any recommendations you may have!

Toss a cup of white vinegar in your steaming water. The butter you want is called ghee.

Easy to make at home by the way. Lots of videos on the process and it's not rocket science, but it does require your attention.

I have cooked them in a sauce just like bbq shrimp. Eat the crab with French bread while you dip both in the sauce.

Stuffed brown crab


stuffed crab recipe

This stuffed crab is a much simpler dish to prepare than it sounds, and is perfect for special occasions



INGREDIENTS


2 sea oxen (if possible female)
1 small spring onion
1 level tablespoon of mayonnaise sauce (if you want to make a 'pink sauce' effect add 1 teaspoon of ketchup)
Salt, 1 clove and 1 bay leaf
Mild olive oil
50 cl. cognac (if you prefer you can use dry white wine, champagne or cava)
Hard-boiled egg

PREPARATION of stuffed crab

We put on the fire a pan with plenty of water, the cloves, the salt and the bay leaf. When it boils, put the crab and cook for half an hour. We cool and reserve in the fridge.
All that remains is to cut the ox in half and fill it. To split it, we will remove the tail that they have on the inside and with the help of a knife we ??will tear off the legs with their meat so that they are as in the photo above but trying to leave intact the shell that has to serve as a 'container'.
We remove all the possible meat from the legs. To stuff the ox we are going to use that very minced meat and also the meat that has remained in the shell with its corals (we remove it with a teaspoon).
We mix everything with gentle movements with the finely chopped hard-boiled egg, mayonnaise and a splash of dry white wine or cava. Once we have this very consistent pasta we put it back in the shell and let it cool in the fridge so that it takes consistency before serving.

How much per lb? Just curious.

I got 43 crabs on sat. Smoke/ fog kept me from getting more today.

I'm of the view that a good crab doesn't need much help. Steam it and serve it with melted butter.

Soak them in the crawfish water after a boil.
