This is a debate me and Ms Antique have all time. She cannot stand white gravy, says it tastes like paste in kindergarten.
I like white gravy (sausage gravy) with biscuits and breakfast. I like white gravy with chicken fried steak.
I make her make me my white gravy when she makes brown gravy.

My mom and grandmother both made awesome white gravy. Yes, I love it with biscuits, but man, I really love it with on the rice when they had Sunday lunches with fried chicken.

I am only talking about with ground up sausage in the morning or on chicken fried steak.
I got to have my brown gravy on rice or mashed potatoes

I'm talking about this, but you gotta put biscuit on bottom, scrambled eggs next, and sausage gravy on top

While I like both of them, I'll choose brown over white 9/10 times.
That said, I love biscuits with white sausage gravy.

My mother had several gravies and may she Rest In Peace I use them as well.
Brown gravy for pot roast. Dark, somewhat thick and very rich. Rice, any type potatoes but she like roasted.
Chicken gravy. Lighter color but still thick. Flour added to chicken fat , blonde roux and milk, salt and pepper. Served with fried chicken and rice or mashed potatoes.
Nice au jus with top sirloin, London broil or eye of round with potatoes. Great gravy with tough meat. Really thin and watery but seasoned well.
Dark brown almost black grease gravy with short ribs (when short ribs were almost free) served over rice. The absolute best she made.
Bacon, sausage, butter, flour and whole milk cooked until flour raw taste gone and served over biscuits. Just a shake of worchestershire.
My father always made chipped beef on toast or shite on a shingle. Or mushrooms on toast. Both consisted of butter flour roux, milk, sautéed mushroom or dried beef with salt, pepper and a bit of worchestershire, cooked until raw flour gone and served over biscuits or toast.
That doesn't include her 6 or so red gravies and pestos.
For the above I need a good chicken fried steak and a good biscuit recipe. I can do the gravy.

Love white gravy on country fried steak and biscuits. Love brown gravy on turkey, mashed potatoes/rice/stuffing. I wouldn't say one was better than the other, just depends on what they are used for.

I love both.
Although I will say, just for a change, pour brown gravy over chicken strips. I seldom do it but it's so good.
I've had white gravy on mashed potatoes and it's very good.
I'm just a gravy lover.
