Rye is going to generally have more of an herbal profile, think star anise, mint, and just general savory herbaceous tones.

They aren’t all minty, they don’t all have a star anise profile, but they are generally less sweet than bourbons.

I haven’t tried it, but it’s that “mystery mashbill” that a few different brands sourced in 2021.

Same source for Doc Swinsons 15, Old Soul 15, and a few others that I can’t think of. Supposedly it’s Jim Beam that contract distilled it, but that’s never been confirmed.
