Serious question for you Lafy folk, is there any difference between a ponce and a chaudin? I've never seen anything to make me believe there was.
I'm from NOLA but was intrigued enough to look it up.
Chaudin (from the French word for stomach), also referred to as ponce or Southern Louisiana Ponce, is a meat dish from southern Louisiana, USA, (primarily the southwestern portion of the state). It is a sausage-like variant made from ingredients sewn up in a pig's stomach.

Same thing. Different areas call it different names.

That's what I thought but I've asked a few folks over the years and never got a definite answer.

You got smoked or fresh?
Fresh.
I'm pretty sure I could spend my whole paycheck between Best Stop, Don's, and Johnson's Boucaniere.

I've been meaning to make it out there. Do you get the pure pork, jalp cheese or what?

Are you going to crack one?
I picked one up on Saturday in Houston but I haven't tried it yet.

I think I heard they would be $130-$150. Kind of pricey if you ask me. Especially since you can't verify that it is 15 year old juice. Sure it says distilled in 2001 and bottled in 2016 but why not just state 15 years old?

I got mine for $122 at Spec's Downtown Houston.

So since theres NAS and it just says 2001, means they could take it out the barrel at let's say 10 years and tank it for 5?
