This I just can't wrap my head around...maybe if I was feeling a little queasy and wanted something a little bland to help settle the stomach. Stuffing French bread with French fries just doesn't sound appealing. I love places like Parkway and Guy's, but their fries are on Wendy's level.

The only way to order Parkway's fries correctly is topped with debris, chedder, pepperjack and jalapenos imho.

Parkway Shrimp

Bear's (Covington) Roast beef

Custom made to order: Oysters, swiss, bacon, dressed.

Chimes used to do a oyster with blue cheese slaw that was great. I don't why they discontinued it.

I know Mahoney's gets a lot of hate but that root beer ham poboy is pretty damn good.

I usually order either a shrimp or roast beef... from various places... usually, when I want oysters, I go to Casemento's for the oyster loaf, since I live so close..

edit: that said the bbq shrimp one at Liuzza's is my favorite, though their is an asterisk since its more of a knife and fork kinda sandwich..

Had one and they are damn good. But by definition alone, they are not a po-boy. More of a po-sandwich (Lake Charle's red neck version of a po-boy)...

Smokey oyster poboy at Bevi is beyond amazing.

Surf and Turf at Parkway is also delicious but the smokey oyster almost brought me to my knees.
