What yall cook with grillades?

Wife dont want a grillade poboy... what's yall go to side with it?

Grits is most common. Rice or potatoes would do well.

Mashed cauliflower, spaghetti squash, etc.

Would be killer with mashed sweet potatoes. Do them savory with butter and garlic so they’re only a little bit sweet. Kinda similar to Ruffinos pork cheeks dish.

I've never done it with a gravy like that, but maybe its just a down the bayou thing.
Ended up doing baked potatoes because thats all I had in the fridge. Going to do grits next time
Also pretty drunk so im gonna cook an egg and throw that on there too

Bayou grillades are grilled, no gravy. NOLA grillades are braised, and typically served over grits.

The bayou style are good with fresh French cut green beans cooked with new potatoes, or some little baby green Lima’s or petits pois in a roux with onions and garlic. Or maybe white beans....
