What to do with this duck?

I threw down yesterday on some duck poppers. I had more duck than jalopenos. Now I have about 20 strips of duck. Besides frying what can I do with this?

Duck tacos with pico de gallo

Did a beer can duck a few weeks ago and this was the last meal. Was a winner.

Rub, smoke, shred for duck tacos. Garnish with white onion, cilantro and Mexican crema.

Solid responses. How long should I smoke them? They are cut in small strips. I can’t imagine they would take too long.

Not sure. I'm sure you probably don't need to apply smoke for too long since they have larger surface area. You probably need to make sure there's plenty of liquid in the smoker so they don't dry out.

Maybe smoke for and hour or two, then finish in the crockpot if not tender enough to shred.

Skewer them and do some type of asian glaze on the pit, and serve over fried rice

Duck recipe
Recipe is for 10 medium size ducks so adjust accordingly. Need to cook outside.

1- stick unsalted butter
1 - 2 oz jar Paul Prudhomme's blackened redfish seasoning
10 - ducks

Melt butter, add 2 oz jar seasoning, mix well - will make a paste.
Cube duck breast in dice size cubes
Mix cubes in paste set aside

Need 8 to 10" cast iron skillet and a burner.

Put cast iron skillet on burner and get white hot. Take a serving spoon of duck breast and put in skillet. Will smoke and catch on fire. Continuously stir for exactly 60 seconds. No more no less. They are done after this. Put skillet back on burner, get white hot, and repeat.
