I got a pack of tails in the sink.

What to do with them? Besides an ettoufee?

Any ideas? I’m bored in the House

My dad likes to do a crawfish quiche. I've never tried to make it myself but it's pretty tasty.

You could do a crawfish fettuccine and serve with some paneed veal.

Etouffee, Creole, fry them, stir-fry, all kinds of things. But, whatever you do, serve over rice...

Enchiladas or crawfish cream sauce over fettuccine would be my choices

The lady actually made a crawfish curry last night that worked surprisingly well.

Look for crawfish cardinal in the TD recipe book. It's great in puff pastry shells or over pasta.

I made a sort of crawfish pie dish last night. Individual servings. It was very good. I used more veggies than called for and more of the Old Bay than called for. I didn't have asiago on hand, so I subbed fresh grated parm reg, but it's not a cheese dish.

Anybody got an enchilada recipe? That sounds like a good idea.

Google Paul Prudhomme’s crawfish enchilada recipe. Lots of steps but not difficult.

That's actually a really good idea. Unfortunately I don't have a recipe.

There's one by Lee Bailey that I like better, but I can't put my hands on the cookbook or the recipes. It doesn't pull up online. Any recipe for them is rich.

Basically anything you want! Get creative and experiment. I’m doing crawfish bread and crawfish bisque with leftovers today.
