What new foods have you been cooking?

Fairly recently we've been making ramen at home and I've been enjoying it. It was something we had never made prior to a few months ago and now we've made 4-5 different versions since. Always good to break up monotony in the kitchen.

Anything new you've been cooking?

Similarly, we’ve done several variations of pho. We don’t make the noodles, but we make the broths from scratch. It’s been fun, but it’s easier and not much more expensive to just go to a pho restaurant

Yeah I should be clear, we buy the noodles. Trying to keep it a bit healthier and get the kind made with millet and brown rice from WF.

Spaghetti squash has been a new thing for us. It's pretty tasty with a cheese sauce and protein. Just roast it in the oven with some olive oil and salt, shred it, add sauce and chicken or whatever and away you go.

Great low carb option. Have also been doing shirataki noodles...also low carb, high fiber, and tasty.

Fiddle head ferns. Great roasted in the oven, or added to pasta.

I'm late as hell but I got a ceramic grill/smoker about 10 months ago and have been smoking a ton of crap. Briskets, ribs, chickens, homemade bacon, smoked bacon mac and cheese, etc. I realize this is nothing new or exciting but I can't believe it took me this long to start doing this.

Full slab bacon, or regular store bought thick sliced bacon? I've done a ton of the latter and it's great with a maple syrup drizzle and a brown sugar and kosher salt rub, but I definitely want to try a full slab pork belly soon.

For the last couple of months, I've been working on my pasta Carbonara. I tried a few great variations in New York and wanted to try guanciale instead of pancetta which is more commonly available locally and it's surprisingly good. Guanciale is basically pork jowls, but seasoned with Italian herbs and spices. When it's diced and browned in olive oil it tastes like little crispy cracklins and it adds nice texture that pancetta doesn't quite achieve.
I've also found that adding 2 cups of ice to the boiling pot of water,when the pasta is ready, brings the pasta to the right temp so that the eggs don't become clumpy and the Carbonara sauce is creamy.

Bought a pork belly, cured it for 7 days, smoked and sliced.




I did the bacon mac & cheese with just store bought bacon.

Sounds damn good. I'd dice that up and throw it in pasta dishes, and throw it in with your trinity when you sauté vegetables. No limits.

We have been cooking down kale with a light cream sauce and butter for our side dish. Until then I did not realize how easy and great this is to make.
