What is your go to meals for different occasions?

What I really want to know is what is your surefire can't miss meal that you serve for guests the first time they eat at your house? Followup, what is the meal that takes a lot of effort and you only cook it for special occaisions?

My cant miss for guests is chuck roast beef poboys with au jus. My special occaision meal is smoked brisket. I love that stuff but rarely do i have a day to babysit a smoker.

Tuna bellies and poke if time is an issue.

Brisket when time permits.

Football - Gumbo
Date night - Steaks
Double Date night - Osso Bucco
Casual date night - typically some simple Italian
Cuban night - either picadillo or pulled pork with mojo sauce with some black beans
