pickle the ones you don't use fresh. They will last a long while.

I also save a few and dry them for about a year with various herbs and make my own dried herb/pepper seasoning mix

Jam a bunch into a Grolsch bottle and add vinegar.

Dice them up and infuse into the cooking oil of your choice.

I have a jar filled with diced up cayenne peppers and vegetable oil... works great for adding a little heat to anything I would normally use the cooking oil on.

ETA: I'm sure vinegar would work the same way, then use the infused vinegar in place of actual vinegar.

basically

you can google "homemade pepper sauce" for all kinds of recipes

I usually add garlic cloves and whole peppercorns as well

You could also make your own hot sauce... it's not too difficult.

My family usually makes a chili paste with all our peppers. Olive olive, the chilies, and garlic(not needed though).

Freeze them. They'll be great for cooking.

Like everyone said--salsa and pickle.

I pickle half of mine. I created my own brine. I use pickling spice, salt , and brown sugar. I always lightly stir fry the peppers with whole toes of garlic before putting them into the jars. We love them.
