Slight hijack:
Central Market here in Fort Worth carries Comeaux’s andouille and tasso. Never tried it, but curious if it will work in a pinch when my freezer is void of the usual suspects that I ship in/ferry back from south La.
Is their stuff any good?

There are two places in French Settlement on hwy 16 that make their own smoked sausage.
Porche's has been around for decades but they flooded in 2016 and took awhile to reopen. I've not been since it reopened.
Junior's Meat Market is about a mile down hwy 16 and is legit. It's worth the 30 minute drive from BR.

I buy boston butt whenever it is on sale and make my own. I eat a ton of smoked sausage so it saves me a lot. I also enjoy giving it to friends and such so I go through a couple hundred lbs a year.

Spuddy’s/La Bon Boucon in Vacherie
Meche’s in Opelousas
As far as deer sausage, there’s none better than the guy in Raceland that CHEDBALLZ mentioned.
My favorite fresh sausage is Nunu’s.
If in a pinch: Conecuh
I’ve never cared for Manda but this “after the boil” stuff has me intrigued.

Their Nacho Libre is nothing like regular sausage, Has a lot of chilli powder but it’s really good if you like that type of flavor.
