What are some things you've learn about food that have surprised you?

I recently learned that lasagna isn't supposed to have cheese in the filling. Yet it's very common for this to be the case at most "Italian" restaurants.

That many Mediterranean, Arabic, Indian, and Italian foods are spiced with nutmeg and cinnamon.
Growing up, cinnamon was a dessert flavor.
Nutmeg was Christmas.

Initially the claim was made by David Chang in a video I was watching
Upon further research it turns out it's not traditional which is surprising to me. Mario Batali and the like don't use cheese as a filler. The white layer is supposed to be a bechemel sauce, not cheese. Weird right?

FODMAPs are the new gluten.
