What are some of your favorite "Crock Pot" dishes?

I'm a big fan of the old school "crock pot" - there are a few dishes in my regular rotation that I cook via a "crock pot" beef stew, hamburger hash, white chicken chili, tater tot cheesy chicken casserole, etc.

I'm always looking for new dishes to add to the rotation.

What are some of yalls favorites? Post the recipe if possible

Carnitas. 3-ish pounds of pork, 1-2 onions, garlic and your own seasonings to your liking. Incredibly easy and an inexpensive cut of meat per pound.

I also do black beans with salt pork, cumin, cilantro, onions, celery, carrots, red bell peppers, and chicken stock.

Serve it over yellow rice with avocado, mango, red onion, cilantro, and lime juice salsa on top

SpruceEats - Calico beans with Ground Beef is really one of the original crock pot recipe book recipes.

Easy to make and fills the crock pot. Good Fall/Winter beef and beans BBQ-ish flavor dish. We always used 4 beans (baked, kidney, lima, and navy or butter).

If you like Indian food I've made this butter chicken in the slow cooker several times and love it.

White beans, water, zatarains white bean seasoning, salt pork and slow cook for 8 hours. Some stores are very hard to find white bean seasoning packs. You can substitute with red bean seasoning mix but it tastes slightly different

Chicken Tortilla Soup

Make a few modifications to suit the kiddos, but basically this recipe. Usually pick up a rotisserie bird from Sam's, debone and throw that in along with all the other stuff, cook it for half a day or so, refrigerate overnight, then serve the following day(s).
