What are some healthy recipes that are easy to make ?

I hate the word healthy because everyone has a different intended meaning. No idea what OP is specifically meaning. Are we talking heart healthy? Low calorie/fat loss? Avocado oil is heart healthy, but the nutritional information/calorie count is about the same as any other oil so you're not going to suddenly shed pounds by using the stuff.
I like to make chicken salad with Greek yogurt or Hellman's light mayo. I make mine too moist to use the real stuff. It would be a 900+ calorie sandwich

I’ve been making a broccoli and cauliflower rice casserole that uses the spreadable cream cheese (garlic/herb or onion/chive) as the binder. I make a big batch to last all week.
4 bags cauliflower
2 bags broccoli
2 small or one large container of cream cheese.
Chop an onion and cook with a little butter until clear
Add cauliflower and broccoli and cook until tender (10-15 minutes).
Mix in cream cheese until all melted, then pour into casserole dish.
Top with cheese and bake until cheese is melted, about 20 minutes or so.
You can also add chicken to make it a 1 dish meal. Low carb and fairly low calorie. The cream cheese is better than using a cream of XYZ soup.

Egg salad is your friend. Boil two four eggs. Eat two for breakfast on day 1 while they’re warm. Stick the other two in the fridge. Next day, peel theand coarsely chop or squish with fork. Mix in a little mayo, mustard, pickle relish (sweet or dill, whatever floats your boat). Sprinkle on Tony’s or Slap Ya Mama. Eat with whole grain crackers, or on a pile of lettuce if low carb is your idea of healthy.
Peanut or almond butter is also your friend, when working w limited storage and small kitchen. Buy a jar, it keeps at room temp, Hell, keep it in your desk drawer. All you need is a knife or spoon, and either a piece of decent whole grain bread or some nice Rye or seeded multigrain crackers. Apply nut butter to carb of choice. A tart, firm apple is an ideal companion, it serves as fruit and dessert course all in one.
Other lazy lunch options that are healthier than fast food or shitty Subway:
—hummus and carrot/celery sticks, with a small handful of pita chips or flat pretzels
—black bean salad; drain a can of black beans. Mix with a small can of whole kernel corn, drained. Add a half tsp of taco seasoning and some halved cherry tomatoes, it’s tasty cold from the fridge or warmed up in the microwave.
—tuna salad, duh.
—unsweetened Greek yogurt, your fave berries, and a handful of walnuts drizzled w honey or maple syrup. Yogurt parfaits aren’t just for breakfast.
—kale Caesar salad. Buy washed baby kale. Toss w bottled Caesar dressing and top with two quartered hardboiled eggs. Can be made the night before, as the dressing will wilt the kale a bit, and that’s a good thing, if you’re not counting carbs, a few croutons added just before eating are nice.
—Barilla protein plus pasta. Boil up half a package of Barilla plus angel hair. Drain, combine an appropriate portion with your fave jarred tomato sauce. Buy some good parmesan, grate it yourself, and put a generous amount on top. It will taste way better than you expect, due to the good Parm. Does require heating before eating.
—Cheese and fruit. Buy the sharpest cheddar you can find. Slice an appropriate amount. Eat with a good apple, pear, or some raspberries and a chunk of quality bread. Pretend you’re on vacation in France rather than in the break room.
