I've been fortunate enough to meet Martin Yan twice (Yan Can Cook) and get two autographed cookbooks from him. He was nice enough, but I got the impression his stage persona was different from his off stage persona. Fairly all-business. Not unpleasant, but less bubbly for sure.
I've also met Alton Brown at a trade show. He was extremely nice and unfortunately my group was leaving so I couldn't spend more than a few minutes chatting.

Action Bronson would be a blast to hang out with but doesn't really fall into the same echelon the chefs I mentioned do.
Met John Folse a couple months ago and he couldn't have been nicer. I've heard mixed things about him but my buddy and I had a very pleasant interaction with him.
