I don't know why I've never had it - being that my family is from Basile, LA. Guess we aren't a big tomato-dish family.

Sounds good. Hopefully it will turn out well. I used to make an etoufee out of almost anything. Now I jump straight to a sauce piquant when I have shrimp, rabbit, alligator, oyster, duck or chicken.

We have always called Greek & Lebanese food, "Geek & Lesbian" since I was a kid. I apparently reverted to that in my post.

Perhaps your version makes a better story though.
