Broiled Mahi Mahi with Cajun butter and a salad with comeback dressing.





I have a nephew (sister's son) in Dallas who is an MD. He called my mom's doctor today and relayed what they discussed to us. My opinion is a doctor will tell another doctor things they might not discuss with the family. Anyhow, Mom is better, hallucinations less frequent. Vitals in expected range for a 94 yo. There was no stroke, and her brain (blood supply and blockages) seems no worse than expected for her age. If she continues to improve, responds well to her new meds and has no setbacks, she may come home next Wednesday or Thursday.

That Comeback dressing looks fantastic. Is it similar in taste to Crechale's?

We're having red beans and rice with deer sausage.

Spinach & cheese tortellini with pancetta and peas in a cream sauce.

Garlic bread & Caesar salad on the side.

There are multiple recipes for comeback. I like all of them, including Crechale's.

Our recipe, from my Mom, 70 years ago.

Comeback Dressing

3/4 cup good Mayonnaise
2 teaspoons yellow mustard
1/2 cup Ketchup
2 teaspoons lemon or lime juice
2 teaspoons Worstershire sauce
2 teaspoons paprika
1 teaspoon black pepper
2 teaspoons Lawry’s garlic salt
2 teaspoons capers

Mix all ingredients in a sealable bowl and refrigerate until used – will keep for w couple of weeks under refrigeration.

For shrimp sauce, use 1/4 cup mayo and 3/4 cups ketchup, and horseradish to taste (2-3 Tablespoons)

Glad to hear it MD. Probably giving her time to get fluids, antibiotics, improve her nutrition, and get moving with physical therapy....if I had to guess. Continue to wish her well.

Tonight, wife did a nice roast, rice and gravy with green beans. It takes great effort to not eat (wanted to type "shovel") rice and gravy, after having first consumed the meat and veggies. Just sayin', we all struggle with these macros.

Looks like a cross between cheesy grits and mashed potatoes… And I want every second of it.

I always cheat with mashed cauliflower and buy frozen. Follow package instructions and add some grated cheese.
