Sirloin roll stuffed with sausage, spinach and fontina, simmered in tomato sauce with eggplant.

Put some plain Mac's pork rinds in food processor pulsing till ground. Then seasoned with Mushroom Umami powder, Korean Chili Flakes, Kosher Salt, garlic and onion powder & black pepper. Coated brined(about 60 hours)leg quarters and put in 475 degree oven for 15 minutes, then turned down to 375 for 30 minutes.
Came out perfectly cooked and very moist. Also had a big spinach salad

Actually, I eat steak once a week and seldom eat more than half. The rest of the time it’s baked/ grilled chicken, pork, fish or boiled seafood and vegetables. 62 years old, they put me behind a desk three years ago and I got up to over 300 pounds. Lack of exercise and vendor groceries. Down 90 lbs since March and I walk 30 minutes/ two miles every day on the treadmill. Haven’t missed a day since I started walking in May. Even got my walk in on Christmas. Blood pressure, cholesterol, etc. has maybe been better in life but for an old man, mine ain’t bad. :)
