Hi Mr. Balls. When you make this "after the boil", how do you keep the shrimp from overcooking?

Sup Gris! I throw them in at the very end. The shrimp flavor comes from the leftover shells/heads that I made a stock with. Plus a few tails that got chopped up and sacrificed to the stock. Decobbed the shrimp boil sweet corn, milked the cobs, chopped up the leftover new potatoes, add some trinity a little blond roux, splash of heavy cream, shot of white wine, some green onions and away we go.

Had a nice handful of basil I needed to use, so made some pesto. I had pasta with pesto and meatlsss meatballs
