I'm very excited about dinner. Last night I halved tomatoes, drizzled with olive oil, sprinkles with Old Bay seasoning, then apple wood smoked them in my box smoker. While that was going, I took the heads off and peeled the shrimp that I'm going to use for the dish. The heads were sauteed first, then I added some onion, kombu and water to make a shrimp stock.
For the fish, I've got cod, salmon, PEI mussels, littleneck clams, squid, scallops and crab. Gonna toast off some sourdough bread as a garnish. Fresh basil, thyme, oregano and parsley from my garden. I've never made this recipe with smoked tomatoes, so either it's going to be killer or the tomatoes will overpower the dish. I'm anxious to find out.

Grilled 8 cheeseburger and 4 skin on wood duck breasts. I've had 2.5 wood ducks so far.
