White beans with smoked ham hocks and deer sausage should be done in about an hour. Gonna throw some jalapeño cornbread in the oven. Skipping the rice this go round. Drank way too much beer last night so it'll be bourbon tonight. GEAUX TIGERS and GEAUX USA!!!

Momofuku's Bo Ssam tonight.
Grabbed the idea from the food board.
Pork is just about ready to come out of the oven and rest.
Will try to post some pics later.
IPAs and Vino with dinner.


Eta: Pork just came out the oven around 205. Drink a beer while it rests. Going back in with a brown sugar coating later.

FIL is making a redfish couvillion with his home grown tomatoes and reds the two of us caught a month or so ago.

Definitely says you can let the meat rest prior to the brown sugar addition.

ETA for some pics.

Right after the brown sugar got to crust up some.



The table is set with all the fixins. Sauces and kimchis.
