I make that roast quite often. Made it a few weeks ago and it was great, as usual. I use Pioneer Woman's recipe as a guide and I ordered the Italian dry seasoning she used which is terrific. I ordered salted and no salt. I also add onions. She's got two recipes. One with onions and maybe some tomato paste and one without. I use the one without the onions as a guide, but add onions. I used the crock pot last time with two chuck roasts. I've made for game watching parties and it works out great.

I did the exact same thing. I went by the post that has both the onion recipe and the non onion pepperoncini recipe. I combined the two though because I really wanted onions in it.
I'm so excited about the way it turned out because I'm actually not a roast beef po-boy fan. Like the ones you see all over Louisiana. I'm just not that into them. I would much rather fried oyster when I'm getting a po boy. But this thing is so good, I think my mind can be changed with the right meat.
I also did like she recommends and cook the meat last night and then put the pot in the refrigerator so that the fat was a hard layer for me to just pull off with my hands today. Same thing I do with her short rib recipe.

I was also surprised by how much I liked it. I buttered and toasted the inside of the bread. Really good stuff. I think I ate a sandwich 3 nights in a row when I last made it. I had some left, so I froze the meat mixture and the liquid separately for a quick fix in the future. Good dish for a crowd. We've done it a bunch.
