I'm attempting the reverse sear. Fingers crossed I do it right. I didn't use the broiler pan because of something I read about doing it in a pan with a lip. I hope this works.

Junior requested chips and cheese, so we hit a local Mexican jernt. The Mrs and I had a taco salad and he had chips and cheese.

Just cooked some lasagna my mom made for me and forgot about it in the overn while watching the CFB Playoff showcase. Cheese on top will be extra crispy

275 and tested at 40 minutes. They weren't at 125, so I kept them in for a while longer. I need a different kind of thermometer. Also, I should've used the hottest burner on the stove.

Conclusion: Didn't do it just right, but now that I have a better feel for it, I will try again. Also, maybe I needed thicker steaks.

Someone posted a pic of a 2.5 lb. steak a couple of nights ago. Looked awesome. Was that Janky?

Anyway, you can't learn without trying, so I'm on my way. My goal is a juicier, rarer steak than tonight's.
