Mom peeled the leftover crawfish from the boil last weekend. She stuffed bellpeppers and added the crawfish to the rice dressing. I had one for lunch. They're excellent.

I'm having another for dinner. I'm trying to decide what else to fix to go with it.

Probably a can of soup. Campbell,s Chunky baked potato and bacon soup. To which I will add more back, probably a little chorizo or other sausage, and some habenero peppers.

I'm having carbonara, too. But I'll use a high protein, lower carb multigrain pasta in an attempt to make it slightly healthier. Couldn't find any guanciale, so I bought peppered bacon. Will be inauthentic but good.

Grilled Horse w/some red berry sauce...was interesting. Not tough like I thought it would be. Wasn't a huge fan.

Asparagus

Jealous. Nothing better than peas and cornbread. Except kraft mac and cheese of course

I just ate half a pot pie. I'm going out and don't know if it includes dinner yet

Grilled chicken and baked sweet potatoes (and least I think that will be the side dish).

Here's what I had for lunch at Dark Roux:

Pork belly and crawfish fried rice. It was simply delicious.

I'm watching my caloric intake and will make a taco salad in a bit to go with all of these beers.

The craziest thing has occurred with me lately. Since my 37th birthday in March, I've pretty much phased out ketchup from every facet of my life. It is the damnest thing I've ever been part of. I just dumped an entire bottle of Catalina dressing in my taco meat along with some beans and seasonings the wife found on Pinterest.

I don't think that's it with the line of recent decisions I've made. I'm about to be homeless for six weeks if that tells you anything. I think of it more as me losing my damn mind.
