Enchiladas that have ended up way more labor intensive than I figured.

Made a homemade tomatillo sauce with poblanos and serranos that were roasted, peeled, processed, and simmered.

Pork was browned and then cooked in the sauce.

They're baking now.

We got a herd of Ville Plattians at the camp. Theyve cracklind, boudined, fricasseed, and stewed various such all got damn day. Now got a black cauldron full of mallards and sausage wit some rice in a rice cooker. Lawd

The wife (MHNBPF) Stewed a large hen and captured 6 pints of chicken broth and a wonderful chicken pot pie. Will enjoy more of it tomorrow.

I enjoyed a huge lemontini afterwards and saw Santa Claus walk through the den a while back. I was unable t get out of the recliner to follow him. Not sure where he went. Last time I saw him, he had stepped around the corner and down the hallway toward the living room.

I smoked a pork loin this afternoon and served it with a dirty rice. I was going to do a corn casserole dish but there were no eaters here, so I've got a shite ton of pork loin and dirty rice now in the fridge.

Nothing left to do tomorrow but burn it down and start over. They wreak havoc on anything they touch.

Cook some white rice in the chicken broth,make a pan of cornbread and enjoy. Just beware of the nap to follow.

It was delicious and almost worth the long wait. The Subway next door getting robbed while there was an interesting touch.
