I chuckled a little, because subbing in dark meat chicken, instead of dry breasts, is totally my M. O.
We had rotisserie chicken and bok choi. Very basic. Very healthy.

In the end, the stuffing was great (I had some leftover that didn't get put in the chicken, so I had it on the side). Inside the chicken, it became a non-entity. I'm pretty sure it's my fault.
The ingredients I listed previously all went in the blender (after wilting the spinach in a bit of olive oil). Recipe called for a food processor, but I don't currently have a working one. Seriously, I should only try to follow recipes if I'm going to actually follow the recipe.

Was gonna have smoked lamb ribs, corn mo-sho, & salad.... Had a neighbor offer to give us a night out. So we stuck it n fridge before cooking
