I smoked a speckled belly goose and made goose tacos out of him. It was excellent. Rest of the fam opted for leftovers, of which there are plenty.

Thanks - we had fried catfish last weekend and talked about using the take home leftovers to make catfish stew when we got home. Opted out for reheated fried catfish sandwiches. I think that recipe would make a good stew using left over fried fillets.

Hope to try it soon.

I like shrimp and crawfish stews, but I'm not a fan of fish strews. I don't care for fish courtbouillon either. There are all kinds of fish stews out there from various cultures.
