I had so many spells to cast on people today that I did too many at once. All of their bad karma gave me a headache. It was worth it, though.
























Tooth suddenly decided to need a root canal. Haven't slept in two days. Hopefully the drugs will remedy that.

I am a wimp about dentists. Luckily, I have a good set. 2 cavities in 42 years. That's all so far. Knock on wood.

I've never made enchiladas. Oil, garlic, onion, chicken broth, tomato sauce, chili powder, cumin, garlic powder... I think that's about it.

Ground or shredded meat LL? I love both, I think shredded stew meat is the best, but very labor intensive for Mexican night.

This is the third time I've made this salad, and at least the second time I've posted a pic of it. It might not look like much, BUT MAKE THIS SALAD!!!!

The utter deliciousness cannot be conveyed by this photo.


2 cups of raw quinoa in the rice cooker (& water & then cook it)
Crawfish & fat & juices from a 5# order of boiled
Feta cheese crumbles
Pine nuts
Arugula
Diced red onion
Dill weed
A few squeezes of lemon
I added some Tony's, even though the tails were very well seasoned.

Peel the crawfish over the cooked quinoa so that all the juices go in. Mix all the stuff. Squeeze some lemon juice. Taste for seasoning. Adjust.

Eat a small serving. It will be delicious.

Tomorrow it will be super fabulously delicious.

Truth.

ETA: diced red onion (how could I forget, I lurve it so much)

I concur. Mexican oregeno, if you have it. A lot of stores around here carry it due to seasonal workers picking blueberries. Seems to have a little differnt flavor than McCormicks.

Yeah this was a last minute decision while walking through the grocery store trying to figure out what to cook. Wanted pasta but we are going to Vincent's tomorrow and I can't do heavy pasta back to back.

Just did ground beef.
