I'd suggest finding a farmer's market and a butcher that are near where you live. It's pretty easy to cook for 1 if you are able to buy individual vegetables and get meat cut to order.
Yeah
Other than carrots and celery individual vegetables are pretty easy to come by at most super markets
So this is one trick that I picked up. I like pesto so I made some pesto. Put it in an ice cube tray. After they froze I moved them to another container that I keep in the freezer. Need pesto sauce? Just grab a couple of pesto cubes.

It is a good idea for many things, chicken and beef stock ice cubes for example. As LL is in BR, Southside is good for the veggies she just needs to figure what she will need for the week, which means a degree of pre-planning a menu for that time. Mathernes on Highland, and Bet-R on Perkins have a reduced price meat section which generally has small packages good for one to two. So one meal can be turned into leftovers for lunch the next day.

I'm way too lazy for all this shite these days. School all day, work all night until about 11PM.
I just eat after work each night when we close down.

made a pizza. spent about an hour on the tomato sauce (simmering in fresh garlic, onion and basil is key). deli meat ham, pineapple, green pepper and black olive. was pretty good. should have bought a serrano pepper to mince and put on top though. not quite enough kick for me. gotta balance out the sweetness of the mozz/honey ham/pineapple.
also drinking a Laforet Bourgogne pinot I picked up at The Wine Seller yesterday. not all that great.. really nothing much going on and rather on the thin side. super easy to drink though. that wine shop is a hell of a place. even if glassman's boy behind the counter is a Padres fan.

I will buy a roast and turn that puppy into hamburger with the Kitchen Aid in about five minutes. The food mill is the greatest little toy to play with, but I need to get the sausage stuffer soon, then I can start making my own andouille at home.

Hey man, how is Princeton?

Couldn't make it that early. Dude, you should see my face after the dermatologist and pathologogist finished with it. Hopefully better in a week or so.

I like it. It gets a lot of hate for being commercial, but frick, it's a business! The salumi section has some great stuff and the place is packed. I was disappointed in the selection of vinegars, but I picked up some great cheeses that I can't get around here.
