I've been doing fine so far on this no wheat thing.

Actually forces me to venture out a bit and try cooking some things that I don't usually cook.

My dinner tonight was great. Thanks in large part to my bad arse imagination and culinary skills.

Haven't felt the urge. Didn't feel like cooking tonight. Stuffed eggplant from Langenstein' and some french bread. The usual to drink.

I'm on this new diet where I can't have wheat. It's also low carb so I'm trying to cut out rice.

I decided to make a squash curry with onions and coconut milk. Topped off the pot with some spinach and let it steam.

So I still wanted some sort of rice type thing so I came up with the most genius idea of all time.

I took some cauliflower and grinded it in a food processor until it was about the consistency of cous cous. Put it in the microwave for 3 minutes and let is steam with its own internal moisture.

Served the curry on top of this califlower cous cous and then topped with ground wall nuts to add some texture. The flavors melded perfectly.


ETA: Forgot to mention I deglazed the dry masala with sherry cooking wine. Cooked the vegetables in coconut oil.

It was very good. I had a chestnut and mushroom soup that was ok (needed some kind of kick) .. Then had the triple tail which was excellent ... Mrs. Three putt had the lettuce, pear and pecan salad and the grouper ... We both shared the sweet bread appetizer ... Had a bottle of Kosta Browne Pinot and a glass of port to finish the meal ..
