Um, we made crab cakes and ladled over a dark roux-based, trinity & mushroom gravy? A slurry of panko, mayo, German hot mustard & crab, chilled. Formed in to patties, rolled in more panko, and seared in black cast iron. Gravy on top. Was excellent.
