You know how sometimes the timing, the technique, and the ratio of ingredients all come together for a beautiful omelet?
Yeah, me either.

Yeah, me either.

Supreme pizza. Craving omelets now.

Smoked sausage, peppers, and spinach over white rice. It’s what I had in the fridge. Splashed some pepper vinegar on top.

Affordable steak night. Sirloin and broccoli with a wedge salad and a cheap Malbec.

Steak, Salad and Broccoli again. Two nights in a row. Now I will avoid steak for a while and probably go back to either chili, lettuce wrap deli meat sandwiches, or a keto casserole, maybe chicken florentine.

Just an omelet hint. I've cooked a ton of them. Turn the fire reasonably low. Cover the pan. When there's no liquid, and it's pretty firm, flip it like a pancake. Be patient. Put whatever is in there and fold it over. Buy a decent nonstick pan, specifically for omelets, and don't cook anything else in that pan. Copper is best if you want to go all out.
