Fried some meat pies and buffalo chicken empanadas I made about 6 weeks ago and froze. Hit the spot. Y'all hang on.

I was supposed to be basically fasting this week for Biloxi next weekend and boy the opposite is going down here.

Sure. You can use ground turkey, beef, or pork. I usually use beef, but used ground pork tonight.

I browned a pound of ground pork, seasoning with Tony’s because I can’t seem to stop myself, even when the flavor profile is Asian. Also, at least a Tbs of ground ginger. I added some diced onion, bell pepper, and garlic. Oh, and some sesame oil to sauté the veg. Finally, a bag of cabbage slaw, stirring it all together and letting it wilt, but not totally soft, adding a little rice vinegar and soy sauce while it wilts. Taste for seasoning, adding more vinegar or soy as needed. Top with sesame seeds and sriracha if desired.

Sorry for slow response! Finally heard from my sister in Houma, and they seem to have survived, so far.

Wife did a nice chicken sauce piquante with veggies and rolls. No input from me. Just happy to be here.
