I had some pork roast leftover that I cooked in crockpot with some sweet bby rays.

Shredded it, warmed it in iron pan put on some corn tortillas and some fresh pico.
Almost better than superior grill Shreveport spicy brisket soft tacos.

Dashi is a stock made from water, kombu and bonito flake. We made grits and finished with dashi.

Kimchee is fermented cabbage usually but this one was made with BS. Made a stabilized beurre blanc with xantham gum and added diced kimchee along with yuzu and lots of scallion/cilantro

WTH can you find xantham gum in Birmingham?

I am very limimted in what I can cook by availability. I can just imagine the looks I would get if I asked for xantham gum

Birmingham is the home of 2 Beard Award winners for Best Chef in the SE. The food scene there is quite vibrant.

I don't know how much I would order from there, but I will peruse the site. Thanks for the link!

You do some interesting things with food. The difference between a trained chef and a redneck that cooks for enjoyment is far and beyond.

Wait. I'm confused. Are you working a food truck? You make the hot sauce?

Glass, my parents love going to Birmingham. They've taken a restaurant trip there for the last two years in a row. Well, it's their first stop on a long restaurant trip, but they work their trips so they can go to Birmingham, as well.

This thread is already anchored, too? What's the deal? It's been a long time since I've seen one of these anchored. Stinks.

Cool, Cap. I thought you were still near Oxford. Wasn't that where you were before? I wish your truck was near me. I'd sure go try your food. What else you serving on that truck?

Darn. My niece was at AL but transferred to LSU this year. I was going to Tuscaloosa a few times here and there to visit.
