Catfish, dashi grits and brussel sprout kimchee beurre blanc. Mix of micros (mustard, beet, cilantro, shiso)and pea tendrils. Turned out very nice

I think a 1/2 teaspoon or so of bacon grease for the smoke flavor while sauteeing the onions and garlic will be in my next batch. I had already thought that I would give it a try.
