Well, I decided to make homemade Belgian Waffles for dinner tonight and then thought eggs Benedict would go nicely too.
Of course everyone else's plating came out better than mine. I slightly overcooked my waffle and under poached my eggs which I ended up with three of because someone only wanted one.
Oh, well, it still tasted pretty good!

Not exactly a spring meal, but I had an envie for beef stew. With pearl onions, mushrooms and carrots, over mashed cauliflower. I looked at Julia's recipe for Boeuf Bourguignon and decided I was too lazy for all of those steps.
