No real recipe. I like to dice up some Tasso and sausage (used Double D), start that off first and get a little color, add a bunch of onions, a little (lot) of garlic, butter if it needs a little more fat, season that with some salt and black pepper, toss in some ground meat, get it all browned, add some diced up stewed tomatoes, tomato sauce, your normal chili seasonings or use two alarm or one of the other pre mixed packages, adjusted for the amount of meat in the pot, add some stock, beans if you’re inclined. Let it simmer, adding liquid and/ or a masa slurry to thicken. Had a pound of sausage, a half pound of Tasso and about four and a half pounds of beef in that pot. Taste it as it cooks and add seasoning to taste, as needed. I like to season as I add each ingredient into the pot and build flavor as I go. Don’t know if this helps, I’m not a real recipe guy. Seldom follow a recipe for anything except cornbread. :)
