Weekday dinners

What are your go to meals to prepare during the weekdays? Red beans, tacos, and Spaghetti are 3 of mine and I am looking for a few others.

Boneless skinless chicken breasts make an appearance once a week or so.

Parmesan Crusted chicken breasts.
Pound them flat and stuff them.
Chicken fajitas.

Huge green salad. Mexican of some sort. Tacos, quesadillas, enchiladas. Baked fish. Something on the grill/smoker on Sat or Sun

Shepherds or cottage pie: make 2-3 at a time and freeze. Transfer to fridge in AM, bake for 30-45 mins in evening.

Chili; again, make a big batch and freeze. Perfect for weeknight suppers. Try a turkey green chile with white beans for a change of pace.

Chicken or beef stew

Grilled meat, usually pork or chicken with grilled vegetables to go with it.

In the winter, my wife likes soups and sandwiches from time to time. Broccoli/cheese soup is easy and quick to make, and toss in a grilled cheese sandwich or some cold cuts sandwich and you have a simple meal.

Check out a King Ranch Chicken Casserole. Fairly simple to make and makes enough for leftovers.

Homemade pizza and get the kids involved if you have any.

Chicken and dumplings is also one of my wife's favorites. Great comfort food.

We like to buy a bag of individually wrapped frozen salmon or mahi mahi filets from Whole Foods. Just pull a couple out into the fridge the night before, and when it comes time to cook, I just season and pan sear. Takes maybe 5 minutes. We use ponzu sauce for dipping.

When I buy cheap-y pork chops like center cut, I use this marinade and it is very good. Big flavor so you feel like you're eating something much nicer than cheap pork chops.
