Quality suffers when you grow to that many locations. Pricing, availability and consistency within the supply chain become important. Walk Ons in Indiana and Kansas are selling the same menu as BR and NOLA

A few years ago there was one of those “undercover” shows with the Walk Ons guy in Mobile getting shrimp or working a shrimp boat or something like that. They implied that they got their shrimp right out of the Gulf.
Back then their fried shrimp was good. It had changed.

Wow. Did you actually believe the advertising? What ever happened to critical thinking and an educated consumer. We have let infomercials and commercials feed us “information” when it’s all about their profits.

It isnt feasible to have a consistent product in all of their stores at a decent price using louisiana seafood. Imagine that price at the Las Vegas location

I actually disagree here. I eat at the Gonzales and Zachary locations quite often for work and I think it’s better than it used to be when I was in college on Burbank at the original.
I recently discovered the surf and turn patty melt and I’ve been ordering it every time. I highly recommend it.
The service has improved since the Covid/ staffing issues too.

I get your point a little, but I wouldn't think supply chain issues would be all that hard to work out for crawfish meat, shrimp, and catfish. U.S. product seems readily available.

The last article I read had us shrimp at an average of $9/lb and imported at $4/lb. Demand has been dropping for cheaper proteins so which one do you think they go with?

I get the price issue. It's a big deal, but at least compromise and use one of the three from the U.S.
From what I can see, the gulf coast shrimp industry has been kicked in the gut the last month or two because of this cheap import/soft demand situation.

Have you confirmed they are labeling it as “foreign”? I’d like to know as I don’t eat foreign seafood here.
5.5.4. Imported crawfish and shrimp; notice to patrons of food service establishments required
A. As reflected in Act No. 330 of the 2009 Regular Session of the Legislature, this state recognizes that serious risks to public health may be posed by antibiotics, radiation, and numerous toxins found in seafood products, including but not limited to crawfish and shrimp, that originate outside of the United States. It remains the intent of the legislature to protect Louisiana consumers from potentially harmful chemicals and residues in seafood products that are imported from foreign countries and sold or served in food service establishments in this state. Therefore, the legislature declares that Louisiana consumers have the right to know if crawfish or shrimp imported from a foreign country is being served in a food service establishment, as the consumption of such seafood may pose a health risk.
B.(1) Any food service establishment that uses a menu as a standard business practice and sells or provides cooked or prepared crawfish or shrimp that originate outside of the United States shall display on all menus the country of origin of such crawfish or shrimp, or denote that the crawfish or shrimp are imported, in letters no smaller than the same size, font, and shade as the product being offered, immediately adjacent to the menu listing of the seafood item being sold. In lieu of this requirement, the notice shall be paper-clipped to the menu, with the same location, size, font, and shade restrictions required when the notice is listed directly on the menu.
(2) Any food service establishment that does not use a menu as a standard business practice and sells or provides cooked or prepared crawfish or shrimp that originate outside of the United States shall display on a sign posted at the main entrance to the establishment that certain crawfish or shrimp, as applicable, being served within originate from a foreign country. Each sign shall be at least eighteen inches tall and eighteen inches wide and shall be written in the English language in letters not less than one inch in size. The sign shall be placed in an open area and in a conspicuous position not less than thirty-six inches from the floor so that it is visible to all patrons.

The school board determines what food will be served and on what days. In the public school system the same meal is served on the same day. The food in the school cafeterias has gone way way down. Every meal is basically a soy bean meal. To make matters worse, the food is usually cooked at one school cafeteria and when the food is done, all the food is transported to every school in the parish. I don't think that the breakfast is cooked in the same manner. I think that the breakfast is prepared at each school.

There’s like a nickel difference in price per lb gulf vs import right now from big box distributors in NOLA. Shrimp market is in the shitter right now
Don’t know how much shrimp a walk on sells in some of these markets they’re in. If you’re not moving enough cases the distributor won’t stock it

I want to focus on the "right now" part. I've had my prices locked in since the end of last year. I'm sure walk ons does as well. Nothing to be done about right now
