Ok... the potatoes helped to make the gumbo a success. The guests went back for a second serving so all is good.
I actually made a little bigger batch to help dilute also. Glad Pat's stays open till 7pm on Saturdays now to add some more shrimp.
Everyone ate all the potatoes too!!!

Hopefully he meant on the side. You can make some good hashbrowns out of crab boil potatoes, too, if there's any left over.

Ahh. In that case, maybe the gumbo was still so bad that the potatoes were the only thing still edible.

No... I took the potatoes out. I cut about 8 or 9 red potatoes in half for the pot and took them out before serving. I left them in a bowl next to the pot and one person took one and put in his gumbo; others followed suit.
Thanks for the suggestions and I'm a little better at seafood gumbo and the use of liquid crab boil now
The potatoes were not even close to what you would get in a regular crab boil.
The only issue with the gumbo was the heat from crab boil. The flavor was on point.

Hmm. Now you have me curious. I wish you'd made a potato salad with those and could tell us how it was.
