Truth BBQ in Brenham TX

Stopped by Truth BBQ in Brenham yesterday to see what all the hype was about. Recently they were ranked #10 in Texas Monthly’s top 50 bbq places and are opening a location in Houston @ Washington & Waugh.
Showed up at 11:30, and there was a sizable line, had about an hour long wait to get food. They have a huge yeti out front with free Lone Stars and water with a donation jar. No liquor license, I bet you could BYOB and they wouldn’t care.
One of their smokers is right off of 290, the other is in a room behind the the outdoor seating area:
Standard yet solid menu; inside there are only 3 tables, and was pretty loud. Plan on sitting outside:
I got my usual bbq order - a half pound of brisket, mix of point and flat, a half pound of pulled pork and a link of jalapeño cheddar sausage, no sides:
Brisket was out of bounds. Both point and flat were cooked to perfection. A true one way ticket to flavor town:
Sausage and pulled pork were badass as well; very crushable:
Very deserving of its ranking. I'm already thinking about my next trip back.

I'm sick of the demand by shortage business model. At this point, the vast majority of these places are mediocre or less.

Incredible that a restaurant with a line around the store can't afford to expand. I wonder if that is by design?

I think you can see some sauce on the tray in the 6th picture down upper left FOV.
Truth is on my short list of BBQ joints (along with the Tejas Chocolate Craftory). Went to Roegels last week - very strong BBQ.

Yes -- one kind, not too spicy, offered to sauce up the pulled pork when ordering or have it on the side.

I still need to get to Roegels, Tejas Chocolate and Corkscrew. Lots of great cue to be had.

Woke up today without much to do and wanting good BBQ. Unfortunately corkscrew and Tejas both closed on Sundays
I hit up both pit room and Roegels.
Looking forward to truth coming down the street from me so I don't need to road trip it

I'm just expanding my BBQ sampling here in Tx. as I've only been here 2 yrs. I've had Killens on several occasions and Smittys in Lockhart. Pit room and others on the radar. Texans sure like their BBQ.

Some of you people are downright insufferable.
And the irony is, if they expanded to the point where you wouldn't have long lines, the product would possibly suffer as it wouldn't be as micro-managed by the original chef(s), and some of you would bitch that they grew too big and "corporate".

They take credit cards but they're only open Friday, Saturday & Sunday. Should have mentioned that in the op.

Do you know how these places start or what it takes to run a profitable business? I'd much rather start like these hole in the wall places and build up a clientelle and money so that when I do open a permanent location I have proper funding and a built-in following for opening day.
Read Aaron Franklin's book. It's an interesting read and gives a lot of insight into what it takes to start and operate a BBQ joint.
