Honey, I love you, but you’ve never eaten more than a pound of crayfishes. I always eat your leftovers. And you dip them in ketchup which is gross. The meat pies you grilled us tonight were great though!!

We usually do etouffee or crawfish boil chowder.

We always do an after boil omelette the next morning. Dice up and toss the leftover components into an omelette and enjoy.
I’ve also done a soup like bisque with the leftover crawfish, corn, and potatoes that came out great.

Make it a little extra saucy and make a salad with it.
Crawfish Remoulade
2 tablespoons mayonnaise
2 tablespoons plain fat-free yogurt
2 tablespoons prepared horseradish
2 tablespoons mustard (Creole or grainy)
2 tablespoons Dijon mustard
1 tablespoon lemon juice
1/3 cup chopped fresh parsley
1 bunch green onions, chopped
Salt and pepper to taste
2 pounds crawfish
