I've never understood the fuss either. A tomato being in a gumbo isn't going to render some horrid gut wrenching satanic concoction that will disintegrate your tongue. Yet that's how a lot of people make it out. I'm not putting tomatoes in my gumbo, but if there's a pot of tomatoey gumbo in between me and hunger I'm going to annihilate it.


That said, the gumbo shack really does suck. Don't waste your time.

I didn't realize how many places use tomatoes in gumbo until it became a hot button topic here. I'm not going to go to Peche or Cochon and ask the server if the put tomatoes in their gumbo then not order it based on that one ingredient. That's dumb, if it's good it's good.


And Johnnys pizza is awesome !

I have in the NOLA area, in Mississippi, and a Papadeaux's not realizing they put them in their gumbos.

One of the hole in the wall shacks in NOLA that did it wasn't bad, but the rest really were' desirable...and Papadeaux's was just a complete disaster.

I must be a glutton for punishment, because I'm one of those people who sees gumbo on the menus wherever I'm at, and have to try a cup at least once.

This is the wrong mentality. When youre talking about restaurants of a certain caliber, everything on the menu should be excellent.

BTW I did get a steak, and it was overcooked, again. Wife ordered a strip and they brought her a ribeye

So you can't tell a server this steak is overcooked and this is a ribeye not a strip? Doesn't take much to fix both of those problems at a steakhouse.

And I've seen the episode the op is talking about and that guy doesn't have a clue but apparently he is selling the hell out of it.

I make dark roux for most all of my gumbos because that is how I like it and I also put a can of diced tomatos in them as well because I like it. I've made them for 40 years and I don't recall anyone pushing a bowl away for any reason. And I don't recall cleaning the dishes and seeing a bowl of picked out tomatos. Some like them some don't. Doesn't matter to me.

maybe the title should have been different.

this isn't about tomatoes being part of the dish more than is is about tomatoes being the main focus and calling that shite mixture a roux.

it's not a fricking roux. roux is 2 ingredients, not your entire mixture right after you dumped in flour.

not roux and not gumbo.
